Don Giovanni is an ancient Acetaia located in the heart of the Hills of Modena, where the union of the climate, the land and the local culture allows to give life to the best Balsamic Vinegar of Modena. Since 1898 we produce vinegar only with our grapes, strictly Trebbiano and Lambrusco, and the whole process of harvesting, pingling, aging and bottling takes place inside our factory. The controls are always guaranteed by our collaborators, who through a series of visual-olfactory tests recognizes the best Traditional Balsamic Vinegar and prepares it either for bottling, or to the travail in the smaller barrel.
